Easter Rice Krispie Treat Cupcakes

Rice Krispie Treat Cupcakes.  What better treat than to combine kid’s favorite sweets – krispie treats and cupcakes?  This recipe started out as a mistake that turned awesome.

I started making the fruity Rice Krispie treats and when I went to put them into the pan, I remembered I had already used the regular pan to bake something that was in the oven!  UGH!  What was I going to do now with this bowl of treats?!!?

Then, I looked over and noticed my muffin pan sitting there.  I grabbed the pan and placed the treats inside of them.  At first, I was just going to have circle-shaped treats.  Then – it hit me!!  I should turn them into Rice Krispie treat cupcakes!!

I whipped up a batch of buttercream frosting and got busy piping a design on top of them.  My kids thought they were the best dessert I had ever made!  Go figure!

Springtime Rice Krispie Treat Cupcakes

Ingredients

Treats

  • 1/4 cup margarine or butter
  • 40 large marshmallows or 4 cups of mini marshmallows
  • 5 cups Krispie cereal (can use regular, cocoa or even fruity, as I did)

Icing

  • 1/2 cup solid vegetable shortening
  • 1/2 cup (1 stick) butter, softened
  • 1 tsp clear vanilla extract
  • 4 cups powdered sugar
  • 2 – 3 Tbs milk

Instructions

  1. Melt marshmallows and margarine/butter in the microwave.
  2. Stir and immediately add in the cereal.
  3. Mix until combined.
  4. Press into greased muffin tins (makes around 15 – 18).
  5. Place in the refrigerator while making the icing.
  6. Cream the shortening and butter until light and fluffy.
  7. Add in the vanilla and mix well.
  8. Gradually add the sugar and make sure it is well blended (will appear dry at this point).
  9. Add in milk, 1 Tbs at a time until it is light and fluffy.
  10. Pull the treats out of the refrigerator and remove from the pan.
  11. Pipe icing onto them using a frosting bag or a knife.
  12. Serve and enjoy!!
