Have you ever had Brunswick Stew? It is warm and hearty and fills your tummy up! There are many variations out there and so sometimes, you might try one that works and one that doesn’t. In fact, this one took TEN TRIES to perfect to the one that worked for my family. It is actually now one of our favorites!!
What I think I love most about this is it can be a “left over” meal. Nope – not that you will have left overs. You can actually make it from left over pork. What we do is make pulled pork sandwiches. Then, use the left over pork to make this awesome recipe. It is the perfect way to get two meals out of one purchase.
This is one of those recipes you can also cook in your slow cooker! I have great love for my slow cooker and had to replace it recently. Instead of the traditional turn knob, I upgraded to a programmable version (like THIS one).

Ingredients
- 5 cups pre-cooked (or left over) pulled pork
- 2 cups beef stock
- 1 medium onion, diced
- 5 golden potatoes, diced
- 2 cups fresh or frozen corn
- 2 cups carrots, diced
- 1 can Italian tomatoes
- 3 tbsp brown sugar
- 2 tbsp apple cider vinegar
- 2 tbsp Worcestershire sauce
- 1 cup Sweet Baby Rays BBQ sauce
Instructions
- Place all ingredients in a crockpot on high for 4-5 hours or on low for 8-9 hours.
