Everyone needs a good chicken noodle soup recipe in their arsenal! This soup is one we always use anytime it’s a cold day, or someone is feeling under the weather. It’s simple and delicious — just like homemade chicken noodle soup should be!

We love chicken noodle soup.  But not just any recipe.  This is the one we’ve been making for years.

It’s my favorite because it is not only ready in just 30 minutes, it is all prepared in one single pot! It is the perfect weeknight dinner.

Campbell’s has nothin’ on my soup!  Doesn’t everything taste better when it’s made from scratch?

Homemade Chicken Noodle Soup

Ingredients

Scale
  • 1 lb cooked white meat chicken, shredded
  • 2 quarts chicken stock
  • 4 large carrots, chopped
  • 1 onion, chopped
  • 2 cups of celery, chopped
  • 2 cups water
  • 1 bag egg noodles ( or 2 cups fresh homemade noodles)
  • Salt & pepper

Instructions

  1. Begin by shredding your cooked chicken (I use a rotisserie chicken)
  2. In a large pot, combine the chicken stock, water, and chicken.
  3. Chop and add your carrots first, then your celery, then your onions (it is important to prep and add them in this order for proper cooking).
  4. Salt and pepper to taste.
  5. Add the noodles.
  6. Bring to a high boil for ten minutes.
  7. Reduce to a simmer, and cook for twenty minutes.
