St. Patrick’s Day is coming up, and I always like to think of ways to make the holidays special for my kids. I also like them to eat healthy, and this St. Patrick’s Day Fruit Rainbow is the perfect balance between both things. This festive rainbow is made with a great balance of fruit and sweets. Your kids will feel like they’re getting a special treat, and you will rest easy knowing you didn’t just load them full of sugar!

Supplies:
Mini Marshmallows
Candy with a Golden Wrapper (we used Hershey’s Nuggets)
Rainbow of fruit and veggies (we used red raspberries, orange baby carrots, yellow pineapple, green grapes, blue blueberries, and purple grapes)
To make your St. Patrick’s Day Fruit Rainbow, just assemble your fruit and veggies in chromatic order in an arch on the plate. Add a small handful of mini white marshmallows to one end, to make it look like a puffy cloud. One the other end of the rainbow, and a “pot of gold”, by adding a few candies with gold wrappers. We used Hershey’s Nuggets, however, you could use Rolos, golden coins, Hershey’s Kisses with almonds, or even mini Reese’s cups. Just find a treat that has a golden wrapper to complete the pot of gold at the end of your rainbow.
My daughter loved all the mix of fruits and vegetables on the plate, and had fun eating the rainbow one color at a time! Encourage your kids to eat a majority of the fruit first, before the sweets, so you can help balance the healthy sugar before the refined sugar. Kids of all ages will love this fun and festive treat!
