The Fourth of July is here and there is nothing more American than Ice Cream and Apple Pie. This mom doesn’t care for apple pie, so we are having ice cream at our house. And not the store bought kind – the good home made ice cream! I have a Kitchen Aid Mixer and used our ice cream attachment (which I purchased last year with my free Amazon gift cards from Swagbucks). If you have your own maker, this recipe should work for yours as well – but your churning time may differ.
2 1/2 cups of Half and Half
8 egg yolks
1 cup of sugar
2 1/2 cups of Whipping Cream
4 tsp vanilla
1/8 tsp salt
First, start by heating the half and half on a sauce pan until hot – but not boiling. Once it reaches that temp, just take it off of the burner and set it aside. In your mixer, add the egg yolks and sugar and combine slowly until thickened. Slowy stir in the heated half and half. Once well mixed, return all to the stove and heat until steaming and close to boiling – but do not boil (stir frequently).
Add in all remaining ingredients and mix until well blended (again, mix slowly). Pour into a container and cover. Chill in your refrigerator for 8 hours (or more). Once chilled pour mixture into your ice cream maker and follow instructions for churning time.
If you have the ice cream attachment for your Kitchen Aid, set it up. Turn it onto 1 and allow it to slow churn for 15 – 20 minutes.

You will probably want to chill it further in your freezer to set up more, unless you have anxious kids (including those who are 35+) and want to eat it right now. If that is the case, serve it up and enjoy quickly – because it is hot out there and it starts to melt pretty quickly (as you can tell from my photo):
*Note that you can add in items such as crushed cookies, candies or fruit within the last 2 minutes of churning and make your ice cream extra special. We also made cookies and cream with Oreos!!
