If you are looking for an easy meal for dinner, you’ll want to try this Cheesy Chicken Simmer. Â It combines just a few simple ingredients and is ready to eat in just 30 minutes!
2 Tbs oil (I use olive oil)
1 lb small chicken breasts (flatten to cook more easily)
1 – 2 cups chopped broccoli
1 can Cream of Chicken Soup
4 oz Velveeta, diced
2 cups of prepared rice
Heat the oil in a pan and cook the chicken. Â After 4 – 5 minutes, turn and cook on the others side.
Once nearly cooked through, add in the broccoli, soup and velveeta and stir. Â Simmer on low heat and stir occasionally as the cheese melts. Â Simmer for 7 – 10 minutes (or until chicken is cooked). Â While simmering, prepare the rice according to package instructions (I use Minute Rice as it is quick and easy).
Serve chicken and cheese mixture over hot rice.
