Sausage Crumble Tortellini Soup


  • 1 package of Jimmy Dean Sausage Crumbles (we use turkey to make it healthier)
  • 2 small white onion, thinly sliced
  • 2 clove of garlic, minced
  • 2 can (14.5 oz) reduced sodium chicken broth
  • 1 cup of water
  • 3 cups torn fresh spinach
  • 1 1/2  cups refrigerated (or thawed frozen) cheese tortellini
  • Grated parmesan cheese


  1. Combine sausage, onion and garlic in a large sauce pan.
  2. Cook until the onion is tender.
  3. Add broth and water and bring to a boil.
  4. Reduce heat and simmer (uncovered) for 10 minutes.  Return to a boil and add the spinach and tortellini.
  5. Cook for 7 – 10 minutes, or until tortellini is tender.
  6. Pour into bowls and sprinkle with parmesan cheese.
