No Bake Oatmeal Breakfast Bites

Ingredients

Scale
  • 1 cup rolled oats
  • 1/2 cup flax seed meal
  • 1/2 cup crunchy peanut butter
  • 1/3 cup honey
  • 1 tsp vanilla extract
  • 1/2 cup mini chocolate chips

Instructions

  • Mix all ingredients in a medium bowl until well combined
  • Roll mixture into 1-tablespoon sized balls
  • Place on a plate or rimmed baking sheet
  • Chill in refrigerator for one hour
  • Transfer to an airtight container

Notes

Storage: These breakfast bites stay fresh in the refrigerator for up to 3 weeks. Makes 20 balls.
